Roasted Butternut Squash Fajitas - featuring Mexican Spice Olive Oil and Cilantro & Red Onion Olive Oil. Owner Bev Penner made this recipe, although skeptical her husband would not like it as it has no meat. They both loved the flavours and her husband commented a couple of times that evening how surprised he was how much he really enjoyed this recipe. The black beans help to add that protein component. The pomegranates in the guacamole and pepitas on top add a wonderful crunchy texture aspect to the dish. Will be adding this vegetarian dish to our lineup of meals.
