That said, it is true that heating your EVOO may result in more subtle transference of flavour to your dish. This is wonderful if you are using a high-polyphenol EVOO with big flavour and bitterness, as it will reduce some of that bitterness. All in all, choosing to finish off your dish with a drizzle of EVOO will achieve the healthy benefits of the unheated olive oil as well as the unmuted transference of flavour.

Baking with EVOO is a wonderful choice. EVOO can definitely be substituted for any liquid oil or melted butter or margarine in baking recipes.

Remember, an EVOO that seems strong will be tempered by the heat of baking, so it will not result in much bitterness transferred to the end product. But depending on your personal taste, you may want to select a mild or delicate EVOO for any baking. Or go for a fruit-flavour Infused Olive Oil, such as Lemon Olive Oil in your waffle batter or Blood Orange Olive Oil in your bran muffins or chocolate cake.

EVOO in baking gives muffins, quick breads, and even cookies an excellent texture, very smooth, light, and spongey. Many experienced bakers love the result in their favourite recipes!
