Cooking with Our Oils
Cooking with our Extra Virgin Olive Oils, Infused Olive Oils, or Gourmet Oils is an excellent way to add health and flavour to your cooking.
Super Premium EVOO is outstanding as a bread dipper, salad dressing, marinade, or finishing condiment. This is your go-to oil for any purpose, from salad dressings to cooking and baking.
A few things to remember:
- The smoke point of EVOO is around 415F and heating EVOO does not diminish all of the health benefits.
- Adding EVOO to your diet raises your good cholesterol while lowering the bad.
- EVOO enhances or adds wonderful flavour to food!
That said, it is true that heating your EVOO may result in more subtle transference of flavour to your dish. This is wonderful if you are using a high-polyphenol EVOO with big flavour and bitterness, as it will reduce some of that bitterness. All in all, choosing to finish off your dish with a drizzle of EVOO will achieve the healthy benefits of the unheated olive oil as well as the unmuted transference of flavour.
Baking with EVOO is a wonderful choice. EVOO can definitely be substituted for any liquid oil or melted butter or margarine in baking recipes.
Remember, an EVOO that seems strong will be tempered by the heat of baking, so it will not result in much bitterness transferred to the end product. But depending on your personal taste, you may want to select a mild or delicate EVOO for any baking. Or go for a fruit-flavour Infused Olive Oil, such as Lemon Olive Oil in your waffle batter or Blood Orange Olive Oil in your bran muffins or chocolate cake.
EVOO in baking gives muffins, quick breads, and even cookies an excellent texture, very smooth, light, and spongey. Many experienced bakers love the result in their favourite recipes!
