Apple & Walnut Lunch Salad

Ingredients:
1/2 c. walnut halves, chopped
2 Tbsp. sunflower seeds
2 Tbsp. pepitas (roasted pumpkin seeds)
1 apple (try Honeycrisp or Granny Smith), thinly sliced
2 c. iceberg lettuce, chopped
approx. 1/2 c. carrot ribbons
2 Tbsp. Lime Olive Oil
2 Tbsp. Smeralda Green Apple White Balsamic
1/2 tsp. crushed red pepper flakes
sea salt and pepper to taste

Add all ingredients to bowl and toss. Easy!

Notes: Serve with fresh herbs if desired - try parsley and chives. Also add crumbled feta, if desired. This salad holds up well if packed as a school or work lunch.
