They both loved the flavours and her husband commented a couple of times that evening how surprised he was how much he really enjoyed this recipe. The black beans help to add that protein component. The pomegranates in the guacamole and pepitas on top add a wonderful crunchy texture aspect to the dish. Will be adding this vegetarian dish to our lineup of meals.

Cilantro Cuban Marinade

Ingredients:2 cloves garlic, chopped1/4 red onion, chopped1/4 c. fresh orange juice1/4 c. fresh lime juice1/4 c. Cilantro and Roasted Onion Olive Oil2 tsp. ground cumin2 tsp. dried oregano1 Tbsp. fresh cilantro, choppedsea salt and pepper, to taste Instructions: Sauté garlic and onions in Cilantro and Roasted Onion Olive Oil until soft. Add orange and lime juice and simmer for 5 minutes. Season the marinade with the rest of the ingredients. Pour everything into a blender or food processor and pulse 3 times to combine. Pour into a plastic container and cool to room temperature; then cover and refrigerate.
