Ingredients:2 cups cilantro, large stems removed1/2 cup pepitas/pumpkin seeds1/2 roasted red onion1/2 teaspoon chopped and seeded serrano chile1/2 teaspoon sea salt1/4 cup Cilantro Red Onion olive oil Instructions: In a food processor, pulse the cilantro, pepitas, roasted onion, chile, and sea salt until well blended. With the food processor running, slowly add the olive oil in a steady stream.
Ingredients:3 avocados, peeled, pitted, and mashed1 lime, juiced1 tsp. salt1/2 c. onion, diced3 Tbsp. Cilantro & Red Onion Olive Oil2 Roma (plum) tomatoes, diced1 tsp. garlic, minced Instructions: In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, Cilantro and Roasted Onion Olive Oil, tomatoes, and garlic. Refrigerate 1 hour for best flavour, or serve immediately. *Tested in Private Cooking Class
