3 large Nature's Farm Smart egg yolks
1/3 c. Parmesan cheese, plus extra to serve
1/2 tsp. Applewood Smoked Pepper
5 - 6 slices smoked slab bacon
227g. Nature's Farm Wild Garlic Linguine
Garlic Olive Oil
Put egg yolks into a bowl. Finely grate in the Parmesan and season with pepper, then mix well with a fork and put to one side.
Cut any hard skin off the bacon and set aside, then chop the meat.
Cook the pasta according to package directions.
Meanwhile, rub the bacon all over the base of a frying pan to add flavour. Add Garlic Olive Oil to the pan and heat. Stir in bacon and cook for 4 minutes or until bacon starts to crisp up. Add cooked pasta to the pan and toss well.
Remove from heat and season with pepper. Pour in egg mixture and toss well, adding cooking water until the sauce is glossy.
Serve with a grating of Parmesan and an extra pinch of pepper.
