1 cedar plank
1 whole fillet of trout or salmon (make sure it fits on the plank)
1/3 c. SMAK DAB Canadian Maple Mustard
1 Tbsp. Ascolano Extra Virgin Olive Oil (mild EVOO)
1 Tbsp. Bourbon Maple Balsamic
Sea salt and pepper
Soak the cedar plank in water overnight. In a small bowl mix together mustard, olive oil, vinegar, and a pinch of salt and pepper.
Fire up your BBQ and set to medium-high heat (around 400 degrees). Place plank on the grill and lay your fish on top. Drizzle the mustard sauce over the fish.
Cook fish about 15-20 minutes, covered on the BBQ (or maybe more, depending on size of fillet) until the flesh is opaque and firm. Remove and serve immediately!
