Blueberry Spring Salad

organic spring greens
toasted walnuts
feta cheese
juice sweetened dried cranberries
Blueberry Balsamic
Roasted Almond Oil

Toss all ingredients for a family-size salad. Or for a single serving, arrange salad ingredients on a plate and drizzle with equal parts vinegar and oil.

Tested in our Eat Well Cooking Class. We loved the dried cranberries Danielle Wollmann from Nourishing Roots Nutrition brought for this recipe. They are plump and flavourful and with no sugar added, they are sweet and satisfying - much better than sugar-sweetened dried cranberries! Danielle also says:
