2 Tbsp. Roasted Walnut Oil
1 Tbsp. Apple Cider Vinegar
1 Tbsp. yogurt
1/2 tsp. honey
salt and pepper to taste
2 green apples, cored and chopped
1/2 c. crumbled blue cheese, feta or goat cheese
1/2 c. pea shoots or sprouts
1 c. thinly sliced celery
1 c. chopped, slightly toasted walnuts
Toss the apples, celery, and walnuts in a large bowl; set aside.
In a small bowl, whisk together the walnut oil, cider vinegar, salt, and pepper. Pour over apples, celery and walnuts to coat.
Plate on a bed of shredded romaine lettuce or other greens if desired and top with pea shoots and crumbled cheese.
