Ingredients for Skewers:
2 boneless chicken breasts “cubed”
2 skewers – soak in water for 1 hour before using
1 Tbsp. Mango White Balsamic
2 Tbsp. soy sauce
2 tsp. Garlic Olive Oil
Ingredients for Cole Slaw:
¼ c. arugula
¼ c. torn radicchio
¼ c. Napa cabbage – sliced thinly
¼ c. each julienned apple, carrot, celery
1/2 slightly underripe mango, julienned
2 Tbsp. Mango White Balsamic
1 tsp. Cranberry Pear White Balsamic
1 Tbsp. Tuscan Herb Olive Oil
Instructions for Skewers:
Cut chicken into cubes. In a medium bowl combine Mango White Balsamic, soy sauce and Garlic Olive Oil, whisk together and marinate chicken for 45 minutes to 1 hour. Then add chicken to skewer. Cook on BBQ on medium high, until chicken is done.
Instructions for Coleslaw:
In a bowl combine arugula, radicchio and cabbage. In another bowl add 2 tbsp Mango White Balsamic, 1 tsp Cranberry Pear White Balsamic and 1 tbsp Tuscan Herb Olive Oil, whisk together. Add apples, carrots, celery, and mango to dressing. Pour mixture over lettuce and cabbage.
Place cooked skewers over Cole Slaw. Serve & enjoy.
