Peach Cobbler

Ingredients:
4 c.( 2 x 796 ml cans) peaches fresh or canned (drained)
1 c. sugar divided
2 tsp. Peach White Balsamic
¼ c. Persian Lime Olive Oil
¼ c. Butter Olive Oil (or melted butter) 
1 1/2 c. flour
4 tsp. baking powder
Pinch of salt
1 1/2 c. milk

Preheat oven to 350F. Toss the peaches with ½ c. sugar and the Peach Balsamic and set aside. Mix Butter Olive Oil with the Lime Olive Oil. Pour the lime and butter mix over the bottom of a 9" x 13" pan.

In a separate bowl, mix together the flour, salt, baking powder, remaining sugar and milk, blend well. Pour this over the butter mixture in the pan--do NOT mix it with the butter and lime simply pour on top.

Top with the peaches, just laying them over the batter mixture (there will be a fair amount of juice from the fruit and sugar just pour it over the batter as well). Bake @ 350F for 50 – 55 min. till golden. Serve with ice cream or whipped cream flavoured with Peach or Coconut White Balsamic.

Note: Can be made in a cast iron skillet and cooked over a campfire or even in a barbecue! Staff tested!
