Orange Asian Chicken Pizza

Gluten free and refined
sugar free.
Ingredients:

Pizza Crust Ingredients:
1 1/2 c. shredded cheese (a mixture of Mozzarella and Cheddar is best)

1-2 Tbsp. cream cheese
3/4 c. plus or minus 1-2 Tbsp. almond meal
1 egg

Pizza Toppings
3 Chicken breasts cooked, sliced and then marinated in 1 Tbsp. Blood Orange Olive Oil (or use leftover chicken)
1/4 c. green onions
1/2 c. chopped peanuts
1 thinly sliced green pepper
1 thinly sliced jalapeno pepper
1/3 c. Old Cheddar cheese, or whichever one you prefer
1/2 c. baby arugula

Sauce:
1 Tbsp. ginger, chopped or 1/2 tsp. ground
1/3 c. orange juice; bought or freshly squeezed
2 Tbsp. Blood Orange Olive Oil
2 Tbsp. (gluten free) soy sauce
1 1/2 tsp. orange extract (optional)
4 tsp. sweetener*
1 c. water
1/2 tsp. ground coriander
1 Tbsp. orange zest or a whole orange
1 Tbsp. peanut butter
1 Tbsp. Toasted Sesame Oil
1/4 tsp. red pepper flakes
1/4 tsp. sesame seeds
2 Tbsp. scallions, chopped


Preheat oven to 425 degrees.

Place the cheese in a medium microwave safe bowl; microwave until melted (approximately 30 seconds, you don’t want to overcook or it won’t mix). Mix with a wooden spoon then add the cream cheese, egg and almond flour; mix with a spoon until it forms a loose sticky ball. This will be quite sticky at first; almond meal varies from batch to batch, so add carefully until you get the right consistency. Set the dough aside. On a cookie sheet, spread a sheet of parchment paper. Place the dough in the middle of the paper, take another sheet of parchment paper and spray with oil, and then lay oil side down on top of the dough mound. Slowly roll the dough into desired shape, and then carefully peel the top layer of parchment off. This layering will enable you to roll the dough out even though it is rather sticky. Place in oven and bake until edges start to turn golden brown, approximately 12 minutes. While baking the pizza crust get your sauce going in a sauté pan. For the sauce, combine the ginger, orange juice, Blood Orange Olive Oil, soy sauce, orange extract, sweetener, water, peanut butter, and coriander in a sauté pan and cook until reduced by half. Then add the orange zest, sesame seeds, red pepper flakes, Dark Toasted Sesame Oil, and scallions. Cook for another minute, then remove from the heat and use as your pizza sauce. Any leftover sauce can be used over pasta at a different time. Remove the cookie sheet from the oven; top with Orange Asian Sauce. Load on sauce, and the rest of the topping ingredients. Top the pizza with the baby arugula only once removed from the oven.
Return pizza to the oven on the top rack until cheese is melted and the edges of the crust brown nicely.

Note: you can serve the pizza drizzled with your favorite balsamic; Blackberry Ginger, Jalapeno White, or Lemongrass Mint White will all be a nice accompaniment.
