Olive Oil Pudding Pops

1 med. egg
1/4 tsp. Salt Cellar Pink Himalayan Sea Salt (or try our Saltwest Naturals Toasted Coconut Sea Salt or Salted Caramel Chocolate Sea Salt for extra flavour)
1/4 tsp. xanthan gum (stabilizer)
4 Tbsp. raw granulated sugar
1 Tbsp. tapioca flour
1/2 c. whipping cream
1/2 c. whole or 2% milk
1/3 c. Mild Super Premium Extra Virgin Olive Oil (or try Sweet Butter Olive Oil for a rich, caramel flavour)

Whisk ingredients together in medium sauce pan until combined. Turn stovetop on to medium-low heat and stir constantly until mixture thickens to a gentle simmer. Remove from heat.

Pour into popsicle moulds and freeze solid.

Remove from moulds (run back of mould under lukewarm water). Enjoy!
