2 c. buttermilk
4 tsp. baking soda
2 eggs - beaten
3/4 c. EVOO
2 3/4 c. flour
1/2 tsp. salt
1 c. All Bran
1 1/2 c. Bran flakes
1 c. raisins (or any other fruit) optional
You will not need a mixer. A big bowl, a whisk and a big spoon will do the trick.This batter will also stay covered in the fridge for at least a week, (as it sits it will get thicker) You can bake a batch fresh every morning if you prefer. I make the batch and freeze them.
Mix buttermilk and baking soda together and add the beaten eggs and the EVOO. Mix, then add the flour, sugar and salt and mix again. Add the bran and the bran flakes, mix then add the fruit and mix again. Pour into your cupcake pan (quite full) and bake at 400 F for approx. 20 minutes. Makes about 20 muffins.
For some extra flavor add some balsamic vinegar, a couple of teaspoons really makes a difference. Using blueberries? Try the blueberry balsamic. Cherries? Try some cherry balsamic.
