Nana's Braised Meatballs

1 lb. extra lean ground beef
1 lb. lean ground pork
3 eggs
2 Tbsp. Mushroom & Sage Olive Oil (or Tuscan Herb)
½ yellow onion, grated
1-2 Tbsp. Garlic Olive Oil
2 c. grated Parmesan Cheese
1 c. dried bread crumbs
3 tsp. Salt Cellar Oregano Spice Blend

In a large mixing bowl, using your hands, mix together the beef and pork until fully
In a small bowl, thoroughly beat the eggs with the olive oil; add to the meat with the onion and garlic, mixing well. Add the Parmesan, bread crumbs, and herbs. Mix well until it feels like a paste. Form the meat into 2” balls, making them as a seamless as possible – this will prevent them from breaking apart while cooking. Place them in a clean bowl or on a parchment paper-lined baking tray.
Fry meatballs in garlic oil until brown. Then place on a baking sheet and bake at 350F for 15-20 minutes until done.

Serve with Pomodoro Sauce or your favorite classic tomato sauce.
