Morning Tacos

Ingredients for Tacos:
6 eggs
1 tsp. Sweet Onion & Bacon Spice Blend
1 avocado, diced
1 c. shredded cheddar cheese
1 - 540 ml. black beans, drained and rinsed
Chipotle Olive Oil

Ingredients for Pico de Gallo:
2 Plum or Roma tomatoes, seeded and dices
1/2 sweet bell pepper, diced
1 small shallot, finely minced
1/4 c. cilantro, finely chopped
1 Tbsp. Chipotle Olive Oil
1 Tbsp. Lime juice
1 Tbsp. Habanero & Honey Vinegar
1/4 tsp. Salt Cellar Lime Fresco Sea Salt

Mix all together and let sit for 1 hour for flavors to blend. Heat tortillas in a med size frying pan over medium heat. Cook 1 - 2 minutes on each side. In a bowl, whisk eggs and Canadian Bacon Spice Blend. Drizzle fry pan with Chipotle Olive Oil. Scramble fry eggs until light and fluffy. Then assemble tacos with the rest of the ingredients. Top with Pico de Gallo.
