Ingredients:
8 slices bacon
6 eggs
1 1/2 c. whipping cream
1 tsp. Mushroom & Sage Olive Oil
1/2 tsp. Italian Herbs Balsamic
1 green onion, diced
1 1/2 c. grated sharp cheddar cheese
1 deep dish pie shell
Preheat oven to 350 F. In a small frying pan, saute bacon until crisp. Drain excess fat and set aside.
In a medium mixing bowl whisk together eggs, whipping cream, olive oil, and balsamic just enough to break the yolks apart. Add bacon to bottom of the pie shell with green onions, then pour egg mixture over top. Sprinkle cheese on top.
Place quiche on another pan in case you have spillage. Place in oven and check after 40 minutes. The quiche is done when you pierce the middle with a toothpick and it comes out clean.
Note: You can make these in prepared tart shells, bake for only 20-30 minutes. For the class we used tart shells and they worked great!
