12-16 slices day-old bread, crusts removed
1/4 c. Butter Olive Oil
1/4 c. Tuscan Herb Olive Oil (for frying)
1/2 lb. fresh mushrooms, sliced
2 c. onions, sliced
1 lb. Italian sausage, cooked and drained
3 c. Italiano cheese (or Cheddar)
5 eggs, lightly beaten
2 1/2 c. milk
1 1/2 tsp. Oregano Spice Blend
salt and pepper, to taste
Spread the Butter Olive Oil on side of each slice of bread (or drizzle, if easier). Place half the bread, butter side down, in a greased 9 x 13 baking dish. In a large skillet, fry the onions and mushrooms in Tuscan Herb Olive Oil. Spoon half the mushroom mixture over the bread in the pan, then top with half the sausage and half the cheese. Then layer with remaining bread, mushroom mixture, sausage, and cheese.
In a bowl, whisk the eggs, milk, Italian seasoning, and salt and pepper. Pour over the cheese. Cover and refrigerate overnight.
Remove from refrigerator 30 minutes before baking. Bake, covered, at 350 degrees for approximately 1 hour (or slightly longer). Uncover and bake 15-20 minutes longer or until a knife inserted in center comes out clean.
Sprinkle with parsley, if desired, Let stand 10 minutes before serving.
