Honey Ginger and Lime Thai Salad

Ingredients for the Salad:
2 c. thinly sliced and chopped red cabbage
2 c. thinly sliced and chopped napa cabbage
1/4 c. thinly sliced green onions
1/2 c. roughly chopped fresh mint, cilantro, or basil leaves, or a combination of herbs (or use more herbs if you have a lot) 1/4 cup chopped
1/4 c. chopped peanuts

Ingredients for the Dressing:
2 tsp. minced garlic
1 tsp. hot sauce of your choice
3 Tbsp Honey Ginger White Balsamic
1-2 Tbsp. soy sauce
2 Tbsp. Tahini, almond butter, or peanut butter
2 Tbsp. Persian Lime Olive Oil
2 Tbsp. Toasted Sesame Oil

Instructions:

Mix all ingredients for salad. In a separate bowl, mix ingredients for dressing. Combine. Enjoy.

Note: This salad is best when you add the dressing just before serving. To make this into a complete meal, top the salad with a sautéed, sliced chicken breast drizzled with peanut sauce.
