Hawaiian Banana Bread

Ingredients:
3 c. all-purpose flour
2 c. sugar
1 tsp. baking soda
1/4 tsp salt
2 tsp baking powder
1 tsp. cinnamon
1 c. chopped pecans or walnuts
2 tsp. pure vanilla extract
1/2 c. crushed pineapple
3 eggs, beaten
1 c. Mild Extra Virgin Olive Oil (or Blood Orange, Lime or Lemon!)
2 c. mashed, ripe bananas
1/2 c. milk
1/4 c. Peach or Coconut White Balsamic

Instructions:

Preheat the oven to 350 degrees. In a large bowl, combine the flour, sugar, baking soda, salt, baking powder, and cinnamon. Stir in pecans or walnuts.

In a separate bowl, combine all remaining ingredients except milk and your choice of balsamic vinegar. Pour the vinegar into the milk until it thickens. Then add to remaining ingredients alternately with dry ingredients until moistened.

Spoon batter into 2 greased and floured loaf pans. Bake for about an hour or so, until a toothpick come out clean. Cool in pans 10 minutes; remove from pans and let cool on wire racks.

Note: You can also add chopped dates, raisins, macadamia nuts, or chocolate chips. Try any combination of flavours of oils and vinegars for some fun!
