Flatbread with Goat Cheese, Onions and Apple

8 small flatbreads (naan or pita bread), or 1 large baked focaccia
2 c. soft goat cheese, spreadable
2 large gala apples, cored and sliced
2 large white cooking onions, sliced
2 Tbsp. Herbes de Provence Olive Oil, plus more for drizzling
2 Tbsp. Gala Apple Balsamic or Smeralda Green Apple White Balsamic, plus more for drizzling
salt and pepper to taste
Gourmet Inspirations Veggie Fusion Spice Rub, walnuts, or fresh herbs for garnish

Drizzle each flatbread with a scant amount of Herbes de Provence Olive Oil and salt and pepper. Bake until toasted (approx. 5-7 minutes at 375F).

Heat 2 Tbsp. of Herbes de Provence Olive Oil in frying pan. Add onions and salt and pepper if desired. Cook until translucent. Add 2 Tbsp. Gala Apple Balsamic and continue cooking to desired consistency - caramelizing will occur, but do not overcook as balsamic could burn.

Spread soft goat cheese and cooked onions over each flatbread. Top with apple slices, Veggie Fusion Spice Rub, nuts, and fresh herbs as desired. Finish with more olive oil and balsamic.

Chef's Note: Dip in Veggie Fusion Dip if desired.

1/2 c. sour cream
1/2 c. mayonnaise
1 Tbsp. Gourmet Inspirations Veggie Fusion spice rub
