Creamy Bacon Caesar Salad

Ingredients:
1/4 c. Bacon or Pizzaiolo Olive Oil
1/4 c. lemon juice or Sicilian Lemon White Balsamic
1 Tbsp. Gravelbourg French Mustard
3 garlic cloves, minced
1/2 c. Greek yogurt or sour cream (or 1/3 c. full fat cream)
1 1/2 tsp. anchovy paste (optional)
fresh cracked pepper (or try a pinch of Saltwest Naturals Apple Smoked Sea Salt)
1 large head romaine, torn
4 cooked bacon strips, chopped
1/2 c. shredded Parmesan cheese, plus more for serving
3 c. croutons
Add all ingredients to salad dressing cruet or mason jar and shake vigorously until well combined.
In a serving bowl, combine romaine, bacon, parmesan and croutons with most of dressing. Sprinkle with additional cheese and remaining dressing.
