Ingredients:
2 green onions
2 Tbsp. Extra Virgin Olive Oil
1 pear
1/4 c. brown sugar, packed
1/4 c. apple juice (or apple cider)
2 Tbsp. Blackberry Ginger Balsamic (or Cinnamon Pear Balsamic)
1/4 cup chopped walnuts
1 round of brie
Instructions:
Wash and trim the green onions, finely chop separating the green from the white and set aside. Heat olive oil in a small saucepan over medium high heat, saute the whites of the onion for about 1 minute. Peel, core and roughly chop the pear int 1/2 inch pieces. Add the pear, sugar, juice and balsamic to the saucepan and slowly bring to a boil, stirring constantly, then turn down to medium heat. Simmer allowing the pear to caramelize and thicken, about 10-12 minutes.
Preheat oven to 350 degrees, place the brie in an ovenproof serving dish or brie baker. Pour the pear and caramel over the top and sprinkle with walnuts. Bake the brie for 10 minutes just to soften. Sprinkle with the green of the onion. Serve warm with fresh baguette, crostini or crackers.
