Blueberry Drizzle Salad

Ingredients for Blueberry Syrup:

1/2 c. wild blueberries
3 Tbsp. white sugar
1 Tbsp. water
2 tsp. lemon juice or Sicilian Lemon White Balsamic

Salad Ingredients:
8 c. mixed greens, washed, dried, and torn into bite-sized pieces
1/2 c. slivered almonds, toasted
1/4 - 1/3 c. feta cheese, crumbled

Dressing Ingredients:
1 Tbsp. fresh lemon juice
1 Tbsp. Blueberry Balsamic
1 garlic clove, minced
1/4 tsp. white sugar
1/4 tsp. salt
1/4 tsp. Dijon mustard
4 Tbsp. Mild Extra Virgin Olive Oil

Combine blueberries, sugar, and water and cook over medium heat until syrup-y, about 5 minutes. Cool blueberry mixture and then add 2 teaspoons lemon juice.

Combine all dressing ingredients, except the oil, and whisk until salt dissolves. Slowly whisk in the oil.

Combine salad ingredients and arrange in a large, shallow bowl. Toss salad greens with dressing. Drizzle blueberry syrup over top of salad.
