BBQ Ratatouille

1 eggplant “coins”
2 medium zucchini “coins”
2 purple onions “thick coins”
1 green pepper “rings”
3 roma tomatoes “thick slice”
1 tsp. Basil Olive Oil
1 tsp. Tuscan Herb Olive Oil
1 tsp. Garlic Olive Oil

Mix all 3 oils together in a bowl. You will need 1 sheet pan with parchment paper. Preheat BBQ at medium high.

Place eggplant and zucchini on BBQ first. Cook for 2-3 minutes, flip over and place onion and pepper on BBQ next. Cook for another 2 minutes, flip over all vegetables and add tomatoes on the BBQ.

During this time, brush oil mixture on top of vegetables, careful for the flames. After 1 minute, take all vegetables off and place on sheet pan.

When plating you are going to layer eggplant, zucchini, onion, peppers, tomatoes, two layers will be a side. Enjoy.
