Balsamic Fudge & Macerated Berries

Ingredients for Fudge:
1 can sweetened condensed milk
2 tsp. cinnamon
1 tsp. vanilla extract
3 Tbsp. softened butter
2 1/2 c. semi-sweet chocolate chips
3 Tbsp. your choice of flavoured Balsamic Vinegar

Ingredients for Macerated Berries:
16 oz. berries (fresh or frozen)
2 Tbsp. your choice of flavoured Balsamic Vinegar
1/2 c. white sugar
1/2 tsp. fresh ground pepper to taste

Instructions for Fudge:
Spray an 8x8 pan with a light even coating of EVOO. Also line with waxed paper. 

In a microwavable bowl, mix together sweetened condensed milk, cinnamon, vanilla and Balsamic Vinegar. Add butter and chocolate chips, stir well.

Microwave 2 minutes on high, stirring every 30 seconds until fully melted. Do not burn.

Spread fudge into prepared pan, chill until set (approx. 2 hours). 

Instructions for Berries:
Place berries in bowl. Drizzle with Balsamic Vinegar. Sprinkle with white sugar. Stir gently to combine.

Cover and let sit at room temperature for at least 1 hour. Just before serving, grind pepper over the fruit.

Chef's Note: Can muddle or crush berries slightly before serving. Serve with fudge on top of beside. Drizzle with more Balsamic or a reduced Balsamic before serving.

Suggested Flavours: Try with Blueberry, Cherry, Strawberry, Raspberry or Pomegranate Balsamic. Also can substitute some Infused Olive Oil to create combination of oil and vinegar flavourings - try the Blood Orange, Chipotle, or Lime Olive Oils!
