Watermelon & Lime Olive Oil Ice Cream

Ingredients:
1 c.
 watermelon, seeded and cubed
1 Tbsp. lime zest
1/4 c. Lime Olive Oil
2 Tbsp. Watermelon White Balsamic
14 oz. can sweetened condensed milk
2 c. heavy whipping cream
2 tsp. vanilla extract

Add watermelon, lime zest, Lime Olive Oil and Watermelon White Balsamic to a blender or food processor. Puree until smooth. 

To a large mixing bowl or stand mixer, add sweetened condensed milk, cream and vanilla extract and mix or whisk until stiff peaks form. Add watermelon/lime puree into mixing bowl and mix on low or fold in just until combined. 

Pour mixture into stainless steel gelato pan or another freezer-safe bowl. Freeze approximately 4 hours for "soft serve" consistency, or overnight for harder scoops.
