Vegan Chili

Ingredients:

2 med. white onions, diced
1 Tbsp. Cilantro & Red Onion Olive Oil
2 Tbsp. Chipotle Olive Oil
1 med. green pepper, diced
1 med. red pepper, diced
1 tsp. cumin
1 - 6 oz. can tomato paste
1 - 28 oz. can tomato sauce
1 1/2 c. cooked kidney beans
1 1/2 c. cooked pinto beans
1 c. frozen corn

Instructions:

Sauté onion with Cilantro & Red Onion and Chipotle Olive Oils for 3-4 minutes on medium heat. Then add peppers and sauté for another 3-4 minutes. Add remaining ingredients, bring to a boil, then simmer on low for 15-20 minutes and cover. Stir occasionally.
