Tuscan Roasted Vegetables

2 bell peppers, any colour
2 c. broccoli florets
2 c. carrots, chopped into large pieces
2 c. cauliflower florets
1 med. onion, chopped into large pieces
2 Tbsp. Tuscan Herb Olive Oil
2 Tbsp. Cilantro Garlic White Balsamic
Salt Cellar Lime Pepper Sea Salt Blend to taste

Toss all ingredients in a large bowl and allow to marinate for a few minutes while you preheat a large baking sheet in oven to 415F. When pan and oven are at temperature, remove hot pan and carefully add vegetables. Veggies will hit the pan sizzling! 

Roast for 15 minutes, stirring once halfway through if desired.

Serve hot, or allow to cool and add to pasta salad. Yum!
