Pork Broccoli Stir-Fry

Ingredients: 
1 pork tenderloin, or 4 boneless pork loin chops
2 Tbsp. Garlic Olive Oil
1 tsp. Chipotle Olive Oil
1 head of broccoli, break into florets
3 celery stalks, cut oriental style
2 carrots, peeled, cut oriental style
2 Tbsp. Sicilian Lemon White Balsamic
5 green onions, chopped
rice vermicelli noodles

Ingredients for Sauce:
2 Tbsp. soy sauce
2 Tbsp. brown sugar
3 Tbsp. apricot jam or caramelized onions (try our Maple Bacon Onion Topper!)
1 Tbsp. Mango White Balsamic

Wash and prep all vegetables. Slice pork very thin. In a medium size pan on medium-high heat, heat all oils, then add pork and sauté for 6-7 minutes. Add all vegetables, except green onions, and Lemon White Balsamic. Sauté vegetables for 6-7 minutes. 

While your vegetables and pork are sautéing, in another medium size pan over medium/high heat, add jam, soy sauce and Mango White Balsamic. Cook for 1 minute and add brown sugar. Then, stir and cook for 1 more minute.

Add sauce to stir fry pan. Toss and you are ready to plate. Serve over rice vermicelli. Sprinkle with chopped green onions.

Note: If you want, you can marinate the pork in a mixture of 3 tbsp. Garlic Olive Oil and 1 tbsp. soya sauce for 1-6 hrs. in the fridge ahead of time.
