Ingredients:
1 c. baby spinach
1 Tbsp. dried cranberries
1 orange, or 1 small can of mandarin oranges
1 Tbsp. finely sliced red onion
2 Tbsp. cooked, crumbled bacon
1 - 2 Tbsp. Feta Cheese
Salt & pepper (try our Saltwest Smashed Peppercorn Sea Salt)
4 Tbsp. Pomegranate Balsamic
1 c. Blood Orange Olive Oil
1 Tbsp. Smak Dab White Wine Herb Mustard,
Cranberry Wine Mustard or Gravelbourg French Style Mustard
Whisk together the Pomegranate Balsamic and Smak Dab mustard. Add Blood Orange Olive Oil in a slow, steady stream until thickened. Add salt and pepper to taste.
Combine spinach, cranberries, orange segments, red onion and bacon in a large bowl.
Toss with dressing and top with feta.
