Spicy "Pizza" Mac N Cheese

Ingredients:
1 lb. elbow pasta
1/4 c. flour
1/4 c. Pizzaiolo Olive Oil
1/4 tsp. red pepper flakes
1/2 tsp. dry mustard powder
1 tsp. salt
1 c. milk
1 c. chicken broth
1 1/2 c. grated cheddar cheese
1 1/2 c. grated mozzarella

Pizza Toppings as desired:
pepperoni slices, mushrooms, green peppers, fresh tomato or basil

Heat oven to 350F. Cook pasta according to package directions, to just al dente. Drain and set aside.

Whisk olive oil and flour together in a dutch oven, then place over medium heat. Cook for 2 minutes and add in pepper flakes, mustard and sea salt, stirring to combine. Slowly pour in milk and chicken broth whisking sauce until smooth and thickened. Add in the cheese, reserving some for the top of the casserole. 

Add the cooked pasta to the cheese sauce stirring to coat the pasta completely. Sprinkle the remaining cheese on top and add pizza toppings. 

Bake in oven until heated through and toppings are cooked, approximately 20 - 30 minutes. Broil for a few minutes to crisp the top if desired.
