Southwest Raspberry Lime Chicken

12 bone-in chicken thighs or drumsticks (or your preferred chicken pieces, rinsed & patted dry)
1/4 c. Chipotle Olive Oil
2 Tbsp. Gourmet Inspirations Kickin' Chicken (or to taste)
3/4 c. fresh squeezed lime juice
3 Tbsp. Raspberry Balsamic
1/4 c. Fancy Infusions Pepper Jelly
(use your favourite flavour)
1 Tbsp. butter

Preheat oven to 400 degrees.

Spread chicken drumsticks evenly in glass casserole dishes, leaving some space between each one. Drizzle Chipotle Olive Oil on chicken and sprinkle with spices. Bake for approx. 35 minutes, depending on size of chicken pieces.

While chicken is cooking, squeeze limes, and add the Raspberry Balsamic, and jelly to large pan. On high heat, reduce sauce by half (or to desired consistency) and add butter.

Platter the cooked chicken and drizzle with sweet reduction sauce. Enjoy!
