Ingredients for salad:
1 c. dry quinoa
1 3/4 c. water
1 English cucumber, roughly chopped
1/2 c. red onion, chopped (or thin strips)
2 c. cubed feta cheese
favourite leafy greens (try arugula, spinach or chopped romaine lettuce)
4 c. cubed watermelon
Ingredients for salad dressing:
1/4 c. chopped or ripped fresh basil leaves
1/4 c. chopped or ripped fresh mint leaves
1/2 c. Medium EVOO or Lime Olive Oil
1/4 c. Cucumber Melon White Balsamic or Pink Grapefruit White Balsamic
1 Tbsp. liquid honey
1 Tbsp. SMAK DAB White Wine Herb Mustard

Add cold quinoa, cucumber, red onion, feta and a couple of handfuls of greens to a large salad bowl.
Add all salad dressing ingredients to a jar and shake well, until emulsified. Pour over salad and toss gently, just until combined, so as to not break feta cubes too much.
Add watermelon on top and serve immediately, or serve watermelon cubes on the side for people to help themselves. Ripe watermelon will break easily and make a very watery salad if combined too roughly.
