1-lb large shrimp (21/25's) peeled with tail off
2 Tbsp. Basil Olive Oil
2 cloves garlic minced
2 Tbsp. Honeybell Orange White Balsamic
1 bag fancy greens
2 avocados sliced
soft Goat cheese sliced
8 inch flour tortillas
Toss shrimp with 2 Tbsp. Basil Olive Oil and garlic, and roast in oven @ 400 degrees for 6-8 minutes. Toss greens with 2 Tbsp. Honeybell Orange White Balsamic.
Serve in tortillas. Or for an appetizer presentation, roll up tightly in tortillas. Allow to cool for 4 hours in fridge. Cut into rounds. Fill each tortilla with 3 cooked shrimp, greens, avocados and goat cheese.
