Rhubarb Cake

Ingredients for Crust:
2 c. flour
1 c. butter
1/4 c. sugar

Ingredients for Rhubarb Mix:
2 c. sugar
7 Tbsp. flour
1 c. heavy whipping cream
3 large eggs, beaten
Cinnamon Pear Balsamic
5 c. chopped rhubarb

Ingredients for Cream Topping:
1/2 c. sugar
1/4 tsp. vanilla
6 oz. cream cheese
1 c. whipping cream, whipped

Instructions:

Crust: Mix together, spread into pan. Pat down and bake at 350F for 10 min.

Rhubarb Mix: Mix all ingredients, add rhubarb last gently stirring mixture together.

Cream Topping: Mix together sugar, vanilla and cream cheese till well blended then mix in the whipped cream and spread on top of cake to serve.
