1 sm. head cauliflower (cut into bite size pieces)
2 c. pretzels
Saltwest Naturals Sousa's Seasoning
2 large eggs
Preheat oven to 400 F. Line a large baking sheet with parchment paper.
Whisk eggs in a small mixing bowl, set aside.
Pulse pretzels in food processor until they become small crumbs. Add in Sousa's Seasoning. Pour about 1/3 of the flavored pretzel crumbs into a ziploc bag.
Coat a few pieces of cauliflower in the whisked eggs. Tap off excess egg. Place into the ziploc bag and shake till thoroughly coated. Place coated pieces onto the baking sheet, spacing them so they are not touching. Repeat until all the cauliflower is coated adding more pretzel mixture to the ziploc as needed.
Bake cauliflower for 15 minutes, until cooked and outer coating is beginning to brown and is crunchy. Serve immediately, with Prairie Ranch Dressing 2.0 on the side as a dipping sauce. (in our Sauces section)
