Dressing Ingredients:
1/4 c. Pomegranate Balsamic
1/2 c. Blood Orange Olive Oil
1/2 tsp. Dijon mustard
salt and pepper, to taste
Salad Ingredients:
10 c. spinach or mixed baby greens
1 ripe avocado, diced
3 green onions, chopped
1/2 c. pomegranate seeds
1 orange, segmented
Whisk together dressing ingredients, set aside. Toss salad ingredients and drizzle with dressing. Oh so yummy!
