Pesto Pasta Salad

Ingredients:
1 pound penne pasta (or try any of Nature's Farm Pasta!)
1 pint cherry tomatoes, halved or quartered
1/2 c. pesto (try our Viani Pesto or make your own using our Easy Pesto recipe HERE!)
2 Tbsp. Tuscan Herb Olive Oil (plus more for finishing)
1 Tbsp. Traditional 18-Year Style Balsamic (or a Dark Balsamic of choice)
fresh parmesan (try Rossi Parmesan Padano)
fresh basil leaves for garnish
sea salt and pepper to taste

Cook and immediately run cold water over drained pasta to cool. Dress cooled pasta with tomatoes, pesto, oil and vinegar. Add fresh cheese, basil leaves, and salt and pepper as desired. Serve with more oil and vinegar for drizzling, a slice of homemade bread, and enjoy!

Note: Add shredded chicken, leftover meatballs, chickpeas, or other protein to make it a complete meal!
