One Bowl Meatloaf

Ingredients for Loaf:
1 lb. ground beef
1 lb. ground pork
1/4 c. Roasted Onion Olive Oil
3 cloves garlic, finely chopped
1/2 c. BBQ Sauce
2 eggs, beaten
1 tsp. smoked paprika
1/2 tsp. chili powder
1 tsp. salt
1 tsp. cracked black pepper
1/2 c. panko breadcrumbs
2 Tbsp. fresh thyme leaves

Topping:
1 c. ketchup
1/4 c. brown sugar
1 Tbsp. Gravelbourg French Mustard
2 Tbsp. Espresso Balsamic
2 tsp. chili powder
1 tsp. Worcestershire sauce

Preheat oven to 375F and brush a 9 x 5" loaf pan with 1 Tbsp. olive oil. In a large bowl, add the beef and pork and mix until soft and well blended. Add the remaining meatloaf ingredients and mix lightly by hand until just evenly mixed. Transfer the mixture into the loaf pan, smoothing the top out and gently pressing to almost fill the loaf pan.

In the bottom of the bowl, that is now empty, whisk together all the topping ingredients to form a smooth mixture. Spread evenly over the top of the meatloaf. Tap the pan on the counter to the sauce run down the sides of the meatloaf. Bake  for 50 - 60 minutes then test to insure the internal temp is 170F. Remove from the oven and  immediately run a knife around the outside of the meatloaf to loosen it. Cool in the pan for 10 minutes then place a wire rack over the top and invert the pan to release the meatloaf. Once up side down on the rack, place a cutting board or serving plate over the bottom and invert again so the glazed side is up. Slice and enjoy!

Note: Not wanting to grill in the winter? Take a slice of meatloaf, put it on a bun with a slice of cheese, pop it under the broiler for a few minutes and enjoy the hearty tastes of a summer cheeseburger without the grill or the cold!
