Olive Oil Chocolate Chip Cookies

Ingredients:
½ c. Sweet Butter Olive Oil
½ c. honey
1 egg
1 tsp. vanilla
1 ¾ c. spelt flour
½ c. quick rolled oats
½ c. semi-sweet chocolate chips
½ tsp. baking soda
½ tsp. salt
Heat oven to 350F. Cream together Sweet Butter Olive Oil, honey, egg and vanilla in large mixing bowl.
Blend dry ingredients in separate mixing bowl. Add to wet ingredients, stirring until combined.
Drop tablespoons of dough onto parchment lined cookie sheet.
Bake for 10 – 12 minutes.
This recipe is directly inspired by Sue Gregg's Chocolate Chip Cookie recipe. A wonderful cookie recipe is softened, elevated and made more heart-healthy by using EVOO. Yum!
