1 1/2 c. each, diced watermelon, cantaloupe, and honeydew melon
1 c. peeled, seeded and diced cucumber
1/4 c. finely minced red onion (may use green onions)
1 tsp. finely minced cilantro or mint (may use more if you like)
3 Tbsp. Cucumber Melon White Balsamic
1/4 tsp. Salt Cellar Lime Fresco Sea Salt
Combine all ingredients in a large bowl and mix well. Cover and refrigerate until ready to serve.
Cooking Tip: Since watermelon is so, well, watery, spread the diced pieces on a couple of sheets of paper towel to absorb some of the excess liquid. Then add to the rest.
