Louisiana Cajun Style Ribs

Ingredients:

Dry Rub:

2 Tbsp. Gourmet Inspirations Smoke and Spice

Sauce:

1/3 cup honey
2 Tbsp. Garlic Olive Oil
1 Tbsp. Habanero and Honey Balsamic Vinegar

Remove sinew ("silver skin") from back of ribs. Place rack of ribs, meaty side up onto a large sheet of heavy duty tin foil. Pat on a little over half of the rub onto the top side of the rib. Turn ribs over and pat on the rest of the rub. Bring up sides of the foil and roll down. Roll up each end. Be careful not to tear or poke holes in foil. Place onto a foil-lined baking sheet and let marinate over night.

Pre-heat the oven to 300 degrees. Place ribs in oven and bake for 2 hours, bake meat side down for one hour then flip and bake for one more hour. Remove from oven and turn the oven up to 350 degrees. Carefully open foil and move ribs to a new foil-lined baking sheet, bone side up. In a small bowl whisk together sauce ingredients, mix well. Coat bone side with a little less than 1/2 of the sauce. When oven has reached 350 degrees place the ribs into the oven and bake for another 10-12 minutes. Remove from the oven, turn ribs over and coat with the remaining sauce. Place them back in the oven for another 5-10 minutes.
