Lime Coconut Bread with Lime Zest Cream Cheese Icing

1 3/4 c. all-purpose flour
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/2 c. buttermilk (or 1 1/2 tsp. Coconut White Balsamic and just under 1/2 c. milk) 
1/2 c. cream of coconut (or substitute whipping cream, sour cream or Greek yogurt)
1/4 c. Lime Olive Oil
1 egg, slightly beaten
1 Tbsp. Coconut White Balsamic
2 tsp. freshly grated lime zest

Ingredients for icing:
1/2 c. unsalted butter, room temperature
1/2 c. cream cheese, softened
2.5 c. powdered sugar
1 Tbsp. Coconut White Balsamic
zest of lime

Heat oven to 350°F. Grease 8x4-inch loaf pan with butter or Lime Olive Oil, and lightly flour.

In a mixing bowl, combine flour, sugar, baking powder and salt together. In a separate bowl, mix remaining ingredients together and add to flour mixture. Mix just until combined. Spread into prepared loaf pan.

Bake 40-50 minutes or until a light golden brown colour has formed on top (toothpick inserted in centre should come out clean). Cool completely before icing.

For icing, cream together butter and cream cheese until soft and smooth. Add powdered sugar in batches until combined and smooth. Add Coconut White Balsamic and zest of lime.

Enjoy as a decadent brunch feature or after-dinner cake!
