Using a mandolin, thinly slice potatoes.
Fry in batches in 1/2 inch of oil in cast iron frying pan. OR bake in the microwave using a microwave-safe silicon chip-maker.
If frying in pan, place on paper towel-lined plate to drain slightly, then transfer to large bowl while still warm. Toss with a drizzle of olive oil, spice blend and sea salt if desired.
If baking in microwave, remove from tray while still warm (careful, tray is hot when it comes out of microwave, but cools down quickly). In a large bowl, toss with olive oil, spice blend and sea salt if desired.
Our favourite combo is the Butter Olive Oil and sea salt, but adding a spice blend while tossing just amps up the flavour!
Another favourite combo is to use Chipotle Olive Oil with a powdered 'ranch' spice blend for a 'Spicy Ranch' chip. Yum!
