Grilled Nectarine and Ginger Fizz Cocktails

Ingredients for Grilled Nectarines:
2 nectarines,quartered and pitted
2 Tbsp. Estilo Affinato di Modena Dark Balsamic Vinegar
1 Tbsp. Roasted Walnut Oil
pinch of cinnamon
pinch of ground nutmeg

Ingredients for 1 Cocktail:
1 grilled nectarine quarter, peel removed
4 oz. ginger beer
2 oz. gin or rum
1 egg white

Garnish:
mint sprigs and nectarine slices

Preheat the grill to med-high heat. Lightly brush the grill grates with oil to keep the nectarines from sticking. Place the quartered nectarines in a large bowl and drizzle with balsamic and walnut oil. Season with cinnamon and nutmeg and gently toss to coat. Once the grill is hot, add the nectarines and grill on all sides until grill marks form. Remove from the grill and set aside to cool.

To assemble the cocktail, remove the peel or skin from 1 nectarine quarter and place it in a large shaker. Add the ginger beer and gin or rum and muddle until the nectarine is thoroughly pureed'. Add the egg white and fill the shaker half-full with ice. Thoroughly shake and strain into a rocks glass. Garnish with a sprig of mint and a slice of grilled nectarine.
