Greek Bruschetta

1 baguette, sliced
3 c. cherry tomatoes, quartered
1 c. cucumber, diced
1/2 c. red onion, diced
2 Tbsp. Spice Works Greek Salad Dressing
1/4 c. Garlic Olive Oil
1 Tbsp. lemon juice
2 Tbsp. Oregano White Balsamic
1/4 tsp. salt
1/4 tsp. black pepper
1/2 c. Happy Dance Hummus (Garlic Jalapeno or flavour of choice)
1/2 c. feta cheese, crumbled

Preheat oven to 350 F. Place the baguette slices on a rimmed baking sheet and into the oven for 5 minutes to toast.

Toss the tomatoes, cucumbers, red onion, greek salad seasoning, olive oil, lemon juice, balsamic, salt and pepper in a large bowl. Remove the baguettes from the oven, spread with hummus, then top with the bruschetta mix and feta cheese.

Served at owner Bev's 50th birthday and it was a hit, a clear cut winner!
