Ginny's Leftover Potato Pancakes

*This is a "Make What You Have" recipe! Do not feel constrained by ingredients or even exact measurements. If you're close, you can't go wrong. Enjoy!

Ingredients:
2 c. mashed potatoes (approximately)
1 egg
1 c. or so of whatever leftover veggies you've got on hand! (chopped ham, diced onion, shredded carrot, cooked mushrooms, cooked cauliflower or broccoli - whatever!)
1 c. shredded cheese (or not, whatever you've got!)
1 - 2 tsp. of your favourite seasonings (try any of our Salt Cellar Spice Blends!)
Butter Olive Oil as needed for frying (or any of your favourite Infused Olive Oils!)

Ginny's Method:

"Take your leftover mashed potatoes and throw them in a mixing bowl. Add an egg (for binding) some bread crumbs, and all the things you have sitting in little containers, lol.

"Add things like shredded carrots, corn, fried mushrooms or onions, cauliflower (you get the idea). You can add one or two ingredients or all them. It always turns out great! I always add shredded cheese, just because. Then mix it all together.

"If it seems a bit too sticky to make patties, add a wee bit of flour at a time until it’s not so sticky. Add some Butter Olive Oil to the pan (or your favourite flavour of Infused Olive Oil) and fry each side until golden brown.

"A little bit of leftover mashed potatoes goes a very long way. It's delicious, easy and fast! You have dinner on in no time and your fridge will thank you."

Dip in some sour cream or plain yogurt, if desired!
