Fried Chicken Sandwich with Chipotle Mango Coleslaw

Whole Grain buns
Provolone cheese slices (one per sandwich)
Fried chicken tenders (one large chicken tender, sliced in half the long way)

1 bag shredded cabbage
1/2 red onion, diced
1 sweet red bell pepper, diced
1/4 c. Chipotle Olive Oil
1/4 c. Mango White Balsamic

Coleslaw Preparation:
Combine the Chipotle Olive Oil and Mango White Balsamic Vinegar in a bottle or covered dish...shake well to fully combine the flavors. (You may adjust the amounts of the olive oil and balsamic vinegar per your taste.) Combine the cabbage, red onion, and red bell pepper in a bowl. Pour the Chipotle Mango Vinaigrette over the cabbage mixture and toss well. Place chicken tender(s) and a provolone cheese slice on a bun, and top with the Chipotle Mango Coleslaw. Enjoy!
