Fall Apple Pear Crumble

Bottom Layer Ingredients:
2 c. sliced apples
2 c. sliced pears
1 Tbsp. Lemon or
Butter Olive Oil
1 Tbsp. Maple Balsamic
1/4 c. almond milk
2 Tbsp. chia seeds
2 Tbsp. lemon juice
1 tsp. cinnamon
1 tsp. vanilla extract
1/4 tsp. sea salt

Topping Ingredients:

3 dates, pitted and chopped
1/3 c. walnuts
1/3 c. pistachios
1/3 c. rolled oats

In a large oven-safe sauté pan (like cast iron) over high heat, sauté apples and pears in Lemon or Butter Olive Oil for two minutes. Stir in Maple Balsamic, almond milk, chia seeds, lemon juice, cinnamon, vanilla, and salt. Reduce heat to medium and simmer for eight minutes until the liquid has reduced and mixture has thickened.

For topping, pulse dates, walnuts, and pistachios in a food processor to a coarse crumble. Add oats and pulse twice to incorporate.

Sprinkle topping over fruit and can serve warm as is, or bake 10 minutes to heat topping through and crisp the edges.
